Banana Muffins

2 1/2 cups (12 ounces) self rising flour
2/3 cup (4.6 ounces) sugar
1/4 tsp cinnamon
12 tablespoons unsalted butter, cut into 12 pieces
1/2 cup (4 ounces) buttermilk 
2 eggs
1 tsp vanilla 
3-4 very ripe bananas (12 ounces), mashed well

Heat oven to 350. Line muffin tins with paper liners. (Makes about 18 muffins)

Place flour, sugar, and cinnamon in the food processor and pulse a couple of times to combine. Add the butter pieces and pulse 10 times until the butter is very well incorporated and it looks sandy in texture.

Dump the processor contents into a mixing bowl. In a liquid measuring cup, whisk together the buttermilk, eggs, and vanilla until combined. Pour over the flour mixture. Add the mashed banana to the flour mixture. Fold it all together gently until all flour is mixed in. 

Divide among paper lined muffin tins and bake at 350 for 18-23 minutes.
