1 cup (7 oz) sugar
1 tablespoon corn syrup
1/2 cup (4 oz) whole milk
1/4 tsp salt
1/4 cup cocoa powder (I use dutch processed)
1/3 cup (2 ounces) dark chocolate chips
3 tablespoons unsalted butter, cut into 6 pieces
1 teaspoon vanilla
Place the sugar, corn syrup, milk, and salt into a large heavy saucepan. Cook, whisking to dissolve all the sugar, until it comes to a full boil. Whisk in the cocoa powder and continue whisking until it dissolves and comes back to a full boil. Turn off the heat and whisk in the chocolate chips, butter, and vanilla. Whisk until fully melted and smooth.
